Dandelion ‘Pesto’

Tarassaco foglia

 

 

 

 

 

about 2 cups

1 l dandelion leaves
1 chopped garlic
1
cup grated Parmesan cheese
1/2 cup pumpkin seeds
1/2 tsp salt
1 pinch freshly ground black pepper
1 cup virgin olive oil

Add all ingredients except the oil in a food processor and blend.

Pour the oil slowly in a stream while stirring.

Ready! You can mix with pasta, rice or use it on bread or as dip! Enjoy!

Rich in minerals, in particular potassium, calcium and zinc.
